Smoked salmon sandwiches on the Oklahoma Joe smoker
Something different tonight. Smoked salmon sandwiches. For this you wanna cure your salmon fillets overnight with equal parts brown sugar and corse salt. You wanna smoke these at 250 degrees until they hit an internal temperature of 125, once this happens baste in maple syrup. Baste one more time before you remove them at 140 internal temperature. Who wants one?
