Recipe :-

* Heat oil or ghee in a pan over medium heat.

* Add cumin, Mustard seeds, Cardamom, bay leaf,cinnamon and let them splutter.

* Add the chopped onions and sauté until they turn golden brown.

* Add the ginger-garlic paste. Sauté for another 1-2 minutes until the raw smell disappears.

* Add turmeric powder, red chili powder, coriander powder, and cumin powder. Mix well and cook for 2-3 minutes until the spices are well blended.

* Add the chopped tomatoes and cook until they turn soft and oil starts to separate from the mixture.

* Add yoghurt and cook another 2 min.

* Add the sliced mushrooms to the pan. Mix well to coat the mushrooms with the masala.

* Cook for about 5-7 minutes, stirring occasionally. Mushrooms will release water initially and then begin to cook in their juices.

* Add 1/2 cup of water (adjust according to the desired consistency) and salt. Mix well.

* Cover and simmer on low heat for about 10 minutes or until the mushrooms are cooked and the flavors have blended well.

* Add cashew paste for reach texture or fresh cream.

* Add kasoori methi, garam masala and mix well.

* Garnish with fresh coriander leaves.

* Serve hot with roti, naan, or rice.
