This time, I will introduce a very tasty recipe of arranged somen noodles with sesame oil flavor. This time, I would like to finish with a lot of summer vegetables on top of the somen noodles. I also show you how to make a very tasty dipping sauce scented with sesame oil. The ingredients are easy to find and very simple to make. I hope you’ll have a great time. Please have a look at it. Easy recipes at home First of all, here are the ingredients for Somen and Soy Sauce. Here are the ingredients. Somen noodles, water, mentsuyu, miso, vinegar, grated ginger, sesame oil, black pepper. I will make it with these materials. The mentsuyu we will use this time is 2x concentrated. There are various types of concentrates, such as triple and quadruple concentrates, so please taste and adjust the amount you put in. And this time I would like to add miso as a secret ingredient. Adding miso makes it very rich. I’m using a combination miso this time. The flavor changes depending on the miso, so I think it’s good to experiment with different kinds. Next, I will introduce the ingredients for the garnish. Here are the ingredients. Pork belly offcuts, eggplant, zucchini, myoga, shiso leaves, kaikai daikon, sesame oil, salt, pepper. I make the ingredients to put on top of the somen noodles with these ingredients. First of all, for the meat, this time going to use pork belly offcuts. You can use any part of the meat you like. Now going to add the summer vegetables, eggplant and zucchini. And then I’ll put the savory vegetables on top as well. You can add whatever you like to these savory vegetables. So let’s start making it with these ingredients. Easy recipes at home Let’s start with the dipping sauce. Mentsuyu in a bowl. And here grated ginger. And then vinegar. First going to mix all of this together. And when well mixed, now dissolve the miso. Make sure to dissolve the miso well so that it does not become lumpy like this. Then put sesame oil here. A lot of sesame oil. And then black pepper. Black pepper here is fine to taste. If children eat it, I would suggest you leave it out. And finally, I add water here. And mix well. In this state, please taste once and adjust the taste. If the taste is too strong, please add water to adjust the taste. If the taste is too weak, please add mentsuyu or soy sauce to adjust the taste. Now let’s refrigerate this one until you are ready to use it. Then going to cut up the savory vegetables. First up is the myoga. Cut off a little bit of the stem of the myoga. Then cut it in half. Now going to slice it diagonally into thin slices. The myoga is now ready to be used. Then I’ll put it in a bowl. Then we’re going to do the kaikaware. For the kaikaware daikon, we cut off this attached root part. This is all right for the kaware. Let’s put this one in a bowl as well. Then the shiso leaves. The shiso leaves are first cut off at the stem. Then the shiso leaves are torn off by hand. Tear them off as you see fit like this. Please tear the shiso leaves by hand like this. If you tear them by hand, they will blend better with the other ingredients. Now I’ll put this in a bowl as well. This is the condiments for the savory vegetables. And now let’s cool the spiced vegetables in ice water like this. This will give the vegetables a crispy texture. Now, please leave this one here until you’re ready to use it. Easy recipes at home Followed by pork belly offcuts. This is a cut-off, so we’re only going to cut a little bit larger pieces like this. Of course, you can use them as they are. The meat shrinks as it cooks, so I think it should be slightly larger. Cut it like this. Then season lightly with salt and pepper. Now you’re ready to prepare the meat. Now going to continue to cut the zucchini. Going to use about 2/3 of the zucchini. First, going to cut off this hefty part of the zucchini. Then I cut it into thin diagonal slices. You can use the rest of this for a side dish or something else. And then this zucchini here, going to lay it out like this, and then going to cut it lengthwise into small pieces. That’s it for the zucchini. Cut it like this. Now let’s continue with the eggplant. First, cut off the head of the eggplant. You can scrape it off without wasting anything by cutting it diagonally with a knife like this. OK. Then I’ll slice the eggplant diagonally into thin slices. Then I’ll cut the rest into thin slices. Make sure it’s about the same thickness as the zucchini. Eggplant is OK with this. Now going to fry the ingredients. First, sesame oil in a frying pan. And then put it on the fire. Let’s turn the oil all over. Once the oil has been turned, going to put the pork in here. Spread it out as much as possible. When you’re putting the pork in, the heat should be low-medium. Now going to fry it quickly. Once all the meat is in, turn the heat down to medium. And let’s fry the meat quickly. And going to get some oil from this pork belly. When it’s about half cooked like this, here’s the eggplant and. And then I’ll add the zucchini. And sprinkle lightly with salt and pepper here. And then we’re going to fry it. OK. Stir fry the eggplant and zucchini until they are this soft. Eggplant and zucchini become this tiny when sauteed. Transfer them to a bat like this and let them cool. You are now ready to prepare the ingredients. Easy recipes at home Next is somen noodles. First, fill a pot with plenty of water and bring this one to a boil. Now it’s boiling. Once boiling, put the somen noodles in this. Be careful not to burn yourself. And then put the somen noodles in. Then immediately rinse with cold water. Then put a bowl under it and put ice in it. And then going to remove the slime while tightening it up with cold water. The water is changed several times to remove the sliminess. By removing the sogginess here, the noodles will not stick to each other over time and will still taste good. And sometimes add ice to the noodles to keep them cool while you take them off. OK. Then let’s drain it well. Now the somen noodles are ready to be served. This is how smooth and delicious it looks. Now let’s serve it up. First, let’s put the somen noodles in a bowl. And then pour the dipping sauce over it. Then I put a lot of ingredients on top. ・ナス1 個
・ズッキーニ 2/3本
・みょうが 1本
・大葉 2枚
・かいわれ大根 30g
・ごま油 大さじ1
・塩胡椒 適量

・5 tbsp Mentsuyu
