Smashed Cucumber Salad ☆ 簡単美味しい!ピリ辛きゅうり塩昆布和え

Smashed Cucumber Salad! This spicy, salty, crunchy, delicious salad is perfect as it is or side dish to a hearty meal. A twist of shio kombu (salted combo kelp) and Gochugaru (Korean red chili flakes) adds so much umami to this dish! 🌶🥒✨

Ingredients:

4 Persian Cucumbers
1 tablespoon shio kombu (salted kombu kelp)
1 tablespoon sesame oil
1 tablespoon soy sauce
1 tablespoon rice vinegar
1 tablespoon sesame seeds
1/2 tablespoon sugar
1/2 tablespoon red chili flakes (prefer Gochugaru)

 Direction:

1) Smash and slice cucumbers on the diagonal.
2) Prepare dressing by mixing sesame oil, rice vinegar, soy sauce, sugar, sesame seed and red chili flakes in a large bowl.
3) Toss shio-kombu and cucumber to the dressing then serve.
