Mushroom Curry Recipe

Paste 1:
In a mixer jar, add 2 small sized onions roughly chopped and grind it into a fine paste and keep aside.

Paste 2:
In a mixer jar, 2 small sized tomato roughly chopped, 1 tbsp of fennel seeds, 4 cardamom, 4 cloves, cinnamon 1 piece,6 cashews,1 star anise, 1 tbsp of kashmiri chili powder and few stone flower.
Grind everything into a fine paste and keep aside.

For mushroom curry:
In a pan, add 3 tbsp of oil.
Add 2 cinnamon sticks and 1 bay leaf.
Add grinded onion paste and saute it until the raw smell leaves.
Add 1 tbsp of ginger-garlic paste and saute it well.
Add 1 tbsp of coriander powder, 1 tbsp of chili powder, 1 tbsp of garam masala powder, 1/2 tbsp of pepper powder, and 1/4 tbsp of turmeric powder and mix it well.
Add 1 & 1/2 tbsp of salt and mix it well.
Now add the grinded masala paste and mix it well.
Add 2 tbsp of curd and mix it well.
Now add the 200g of chopped mushroom and mix it well with the gravy.
Add the required amount of water and mix well.
Now close the lid of the pan and cook for 15 minutes.
Check if the gravy gets thickened, then add kasurimethi as garnishing and finish cooking.
