鶏むね肉はフォークで刺すか、肉たたきでたたく。少し小さめのフライパンにのせ両面に塩をふり小麦粉をふりかける。

フライパンにオリーブオイルを入れて皮目から焼き、焼き目がつくまで両面を焼いたら酒を加えて蓋をして、弱中火で3分程蒸し焼きにする。

蒸し焼きができたらA 砂糖(きび糖)大さじ1、醤油大さじ2、みりん大さじ1と1/2、レモン汁大さじ1、すりおろしにんにく小さじ1/2を入れて、たれを時々鶏肉にかける。
少しとろみがついてきたら火を止め食べやすい大きさに切ったら野菜をそえて、鶏肉を盛り付けタたれをかける。
