Honey Garlic Salmon – Poke bowl

Ingredients:

– Salmon 250 grams
– 2 tablespoons honey
– 3 medium sized garlic cloves
– Salt to taste
– Black pepper to taste
– 1 tablespoon dark soya sauce
– 2 tablespoons light soya sauce
– 1 tablespoon hot sauce
– 2 tablespoons lemon juice
– Julienned cut vegetables of your choice (I used lettuce, carrots, bell peppers, blanched broccoli and sweet corns)
– Parsley or cilantro
– 1 tablespoon olive oil
– 1/2 tablespoon butter
– Cooked rice

Method:

In a skillet heat olive oil and put your salmon pieces. Season your fish with salt and pepper and cook both sides on high heat. Then remove the salmon and wipe off your pan with a tissue paper. Now put butter in the same pan, followed by garlic, then honey and all the sauces. Cook for about a minute on high heat and then pour in your parsley/cilantro.

Now assemble your bowl by putting the salmon over your rice and drizzle that sauce generously over it. Put all your vegetables on the side and enjoy.

Tip: to blanch broccoli, put it in hot boiling water for 2 minutes and take it out. Your broccoli will have a soft and lovely texture then.
